There are two types of snow crab - opilio and tanner (also know as bairdi). Not only are tanner crab much larger than opilio crab, Tanner Snow Crab is characterized by a sweet flavor which is also succulent whereas the opilio crab is not. In fact, in some regions for snow crab, the tanner crab is known as the "King" Crab and the opilio crab is known as "Queen" Crab.
